The cake
1 cake mix, I used white
2 cups melted ice cream, I used butter pecan
1 teaspoon vanilla extract
3 large eggs, room temp
Banana mash
3 large, ripe bananas
1/4 cup brown sugar
1/4 teaspoon vanilla extract
2 tablespoons melted unsalted butter
1 cup roasted and crushed peanuts
pinch salt
Combine everything in a large bowl, stir, and put into a cupcake pan lined with cupcake liners. Bake at 350 degrees for 18-22 mins depending on oven. Pull out and check with a toothpick for doneness. Toothpick should come out clean. Chill fully and hollow out the center if you want to fill it with a filling.
The Strawberry Sauce
1 pint strawberries
1/2 cup sugar
1/4 cup water
pinch salt
Wash and half strawberries, place in a pan with sugar, water, and salt. Bring up to a boil, then lower to a simmer, stirring often. Cook until thick and the strawberries have broken almost all the way down, smashing as you go. Cook time is around 10 mins
The Pineapple Sauce
1 14 oz can of crushed pineapples in pineapple juice
1/2 cup white sugar
2 tablespoons butter, unsalted
pinch salt
Put pineapples in a pan, with a pinch of salt, and the sugar, bring to a boil. Lower heat to a simmer, and cook for 10-15 mins, making sure to stir often, and cook until most of the juice is gone, now add the butter and set aside.
The Chocolate Sauce
1 cup white sugar
3/4 cup coco powder
1 cup milk
1 tablespoon instant coffee or expresso powder (see instructions please)
1 tablespoons butter
1/2 teaspoons vanilla extract
pinch salt
Mixing the sugar and coco powder together ahead of time will help in the long run, then add to a pan with the coffee powder, salt, and milk. Mixing constantly, bring to a boil, then lower heat to a low simmer and cook for 6-8 mins. At the end of cooking, turn off heat and add the vanilla and butter, stir until melted. *I added 1 tablespoon of coffee powder to give a deep flavor, that makes this sauce taste like a dark chocolate. I did this because of all of the other elements to this recipe, I didn't want the chocolate sauce to be too sweet. If you are not making this full recipe, but just the chocolate sauce, I recommend using just one teaspoon of the coffee powder, also tasting for sweetness, and adding sugar as needed.
The Whipped Cream
2 cups heavy whipping cream, chilled
2 tablespoons sugar (see below)
1/2 teaspoon vanilla extract
pinch salt
In a chilled bowl add cream and using an electric mixer, mix until you get to your desired thickness, mine took around 5-7 mins. When you're almost done, slowly add the sugar, vanilla, and salt. I also folded 1/2 of the strawberry sauce into this cream *If making this cream by itself, I would recommend 4 tablespoons sugar, this is a cream in a large collaboration of flavors, and everything needed to be balanced, so I used less sugar.
Once everything is chilled its time to assemble. Fill the cupcakes with one of the fillings/sauces. Cover in cream, and peanuts a drizzle of the chocolate sauce and anything else for Valentines Day, I think these taste great colder.
